My calves ache from the hike and my belly is bloated from the carbs, but I wouldn't want it any other way! What a fabulous retreat...you all make such a positive difference in my life in so many eclectic ways, I can't even begin to list them one by one...but I "count my many blessing" every day, and you are among them. I have asked Tara to post her granola recipe...Daphne emailed that delectable Marsala...Alicia, any chance we culinary plebians could take a peek at that amazing H&H cake? I may get up the courage to try it for Valentine's Day!

  1. Arna, the cake was really simple. One angel food cake mix, prepare as directed and bake in two 9 inch pans until done. Cool and split each into two layers. One devils' food cake mix, 1/2 c. warm water, 1/2 c. canola oil, 1 c. sour cream, 4 eggs, 1 1/2 c. choc. chips. Mix everything but the choc. chips for one minute on low. Then for two minutes on medium. Add choc. chips. Place batter in two 9 inch pans and bake until done. Cool & split each into two layers. Frosting: 2 lbs. cream cheese (yes pounds), beat till nice and smooth. Add 3 c. powdered sugar (although, I think it would be better with just one or 1 1/2 cups). Beat till smooth. Add 1 1/2 t. vanilla. Beat 2 cups whipping cream till really stiff peaks form. Fold whipped cream into cream cheese mixture. Chill. Slice some strawberries. Take two layers of each cake and keep the other layers frozen. Start with a devil's food cake and just keep alternating layers of cake, frosting, and berries until the top layer. Then just use the remaining frosting to enrobe the whole thing. Chill for a few hours in the fridge then eat.
